At Buta Assos, we embarked on our journey
with the philosophy of “Olive Oil for
Health.”
Founded under the guidance of
Nurlan Yusifovin Assos, Çanakkale,
our project
was built on a commitment to
producing with respect for both
nature and people. Operating with a zero-waste principle, we carefully manage every stage
— from
cultivating the olives to
bringing them to your table.
Our goal is not merely to
produce olive oil,
but to create a healthy, natural,
and ecologically balanced
production process.
We Harvest with Care
Our production facility is located right beside
our olive groves — surrounded by
nature.
This allows us to process the olives immediately
after they are handpicked,
ensuring the
highest possible quality and freshness.
We harvest our olives early in the season by hand
and without letting them
touch the ground.
The olives are brought to our facility
the very same day and
processed without delay,
preserving their natural vitality.


Cold Press Technology
One of the most crucial stages of our production
process is cold press
technology.
We use Mori-Tem, one of the world’s most
advanced systems, imported directly from Italy.
First, we wash our olives with cold water
and bring them to the ideal temperature for processing.
Then, they are crushed into a fine paste
and gently kneaded in vertical malaxers.
This process preserves the natural aroma
and high polyphenol content of our olive oil,
maintaining the most valuable compounds
for human health.
We Preserve Freshness
and Quality
After extraction, our olive oil is passed through
a cellulosic paper filter
to remove
any remaining sediments.
This process extends the shelf life of the olive oil
while maintaining its purity.
The filtered olive
oil is then transferred into stainless steel tanks,
where we add a
protective layer of argon gas
to prevent contact with air.
By storing it at a controlled temperature of 16–18°C
we ensure that our olive oil
retains its
original freshness and quality over time.


Every Drop is Bottled
Especially for You
Upon receiving an order, we fill our olive oil
directly into dark glass bottles to
protect it
from light and preserve its natural qualities
Before bottling, we flush each bottle with
nitrogen gas, ensuring both sterilization
and
lasting freshness. This way, every bottle
that reaches your table arrives in
its purest and most
natural form
just as it was crafted.
